If you are a gourmet or simply love cheese in any form, then you absolutely need to visit the cheese shop De Kaaskelder, also known as the “Cheese Cellar.”
It is located in the middle of the large flower market, in a basement space that previously housed a warehouse of the Dutch East India Company.
Today, in this little basement, you will be greeted by a friendly saleswoman in traditional costume, and thousands of cheese wheels will gleam from the many shelves with their smooth sides.
Gouda, Edam, Leerdammer, Leyden, Maasdam and, of course, the gourmet’s choice - “Old Amsterdam” - are just a few of the cheese varieties that you can buy in this shop. All these delicacies are made on the farm of Henri Willig, who decided to take up cheese making in 1974. When just a year later a full bus of tourists arrived at his farm, delighted by the process of producing original Dutch cheese, and instantly bought up everything that was in stock at the time, Henri realized that he had chosen the right path.
Since that time, cheese making has become a family business, and a very successful one - Willig cheeses have become famous all over the world and are sold in many countries.
