Restaurant 'Juuri' has a clearly defined goal – preserving the traditions of Finnish cuisine and maintaining respect for local products. In the age of globalization, express delivery, and a simplified attitude toward food, it is difficult to follow traditions. After all, it is always easier to take salmon fillet from Norway out of vacuum packaging or open a plastic box with fruit from Portugal…
But not in the little restaurant 'Juuri' – only products from local farmers and small producers from the surroundings of Helsinki are used here. Local varieties of fish caught this morning, freshly picked berries and mushrooms from the nearest forests, famous Finnish bread piping hot from a private bakery, and fresh meat from “their own” farmer – only these products are accepted by the chef of 'Juuri'.
Besides patriotism, there is also a rational point in this approach to choosing ingredients – what was still swimming, running, or hanging on its native bush this morning within a dozen kilometers of the capital will be delivered as quickly as possible, which means it will remain perfectly fresh.
Along with preserving traditions and paying attention to product quality, restaurant 'Juuri' embraces the principles of modern haute cuisine. The innovative recipes of the dishes fully correspond to the fashionable trends of the best restaurants in the world. For example, beetroot soufflé goes perfectly with smoked herring cream.
